Hello everyone!
Here are some new arrivals for August!
Two refreshing sakes that are perfect for summer, from Yamasaki (Sonno Brewery), a long-established brewery in Aichi Prefecture.
Introducing two unique "summer sakes" that are delicious when chilled.
Table of Contents
From the popular "Oku" series, brewed in the rich natural environment of Hazu, Nishio City, Aichi Prefecture, comes a summer-limited Junmai Ginjo. This sake showcases the unique craftsmanship of Sonno Brewery, which combines traditional handcrafting with the latest technology to bring out the ultimate umami of the rice.
Flavor and aroma characteristics
The moment you pour it into a glass, a youthful and refreshing aged aroma spreads. On the palate, it is light yet offers the rich umami of rice characteristic of "Oku" and a well-balanced smooth acidity. The finish is surprisingly crisp, with a refreshing conclusion that will blow away the summer heat.
[Recommended serving]
Serve well chilled at 5-10℃. If you want to enjoy a crisp outline, drink it straight from the refrigerator. If you want to taste the sweetness of the rice, wait until it has warmed up slightly.
[Recommended pairings]
Aged summer vegetables, grilled ayu with salt, cold pasta. It also pairs well with lightly salted edamame and refreshing tofu dishes.
"Natsu Kasumi" has a cool, light snow-like appearance. This is a highly satisfying unpasteurized sake with a light cloudy appearance, featuring fine lees, combining the lightness typical of summer sake with the fresh and juicy characteristics of unpasteurized sake.
Flavor and aroma characteristics
The greatest charm is the mellow and gentle mouthfeel created by the lees. A gorgeous aroma reminiscent of fresh fruits and fine bubbles burst in the mouth. While it has a subtle sweetness, the pleasant bitterness and acidity in the aftertaste tighten the overall flavor, making it feel light.
[Recommended serving]
Serve well chilled at 5-10℃. To enjoy the soft texture of the lightly cloudy sake, serve it chilled. If you let it warm up slightly, the sweetness of the Yumemizu rice will expand.
[Recommended pairings]
Aged summer vegetables, grilled ayu with salt, cold pasta. It also pairs well with lightly salted edamame and refreshing tofu dishes.
