How We Select Our Sake

At TOKYO SAKE BASE, we don't choose sake based solely on trends or popularity.
What's most important to us is that we are genuinely moved by the sake after tasting it ourselves.

"This is delicious."
"I want to share this sake with someone."
"I want people to know more about this brewery."

Encountering a bottle that makes us feel this way is the starting point of our selection process.

It's Not About Fame, It's About Emotion

There are truly many wonderful sakes in Japan.
Even among those we don't carry, there are countless captivating options.

That's why TOKYO SAKE BASE doesn't choose sake just because it's "famous," "selling well," or "highly requested."

We take our time to select sake, even if it's from a small or not-yet-widely-known brewery, that genuinely moves us.
Sake that has a story worth sharing.

Delicious on its Own, Without Pairings

When it comes to taste, our primary focus is that the sake is delicious on its own.

Instead of selecting based on food pairings, we prioritize whether we can feel the umami of the rice, the careful craftsmanship, and the core of its flavor when drinking the sake by itself.

Classifications like Junmai, Ginjo, and Daiginjo are, of course, important information.
However, we don't choose sake simply because it's "Junmai, therefore good" or "Daiginjo, therefore amazing."

What matters more than the label is what we feel when we drink that particular bottle.
We believe that's where the true charm of sake lies.

 

The Brewer's Stance and the People Behind the Sake

We are also drawn to the brewer's approach that lies behind the sake.

Do they harness the power of nature?
Do they strive to bring out the inherent umami of the rice?
Do they respect the local climate and culture?
And, while preserving tradition, do they embrace new challenges that resonate with contemporary sensibilities?

We believe that handling sake means walking alongside the brewery.
It's not just a matter of procurement; it's a relationship where we share the same vision and work together to convey the sake's appeal.

That's why the brewer's personality, passion, and shared values are also very important to us.

Drink, Talk, Visit, and Select

In the actual selection process, we start by simply drinking a lot of sake.
We sample numerous sakes encountered at events, in different regions, or introduced by brewers.

Once we find a bottle that truly moves us, we talk with the brewer, visit the brewery, learn about its background and philosophy, and take our time to build a relationship.

Just because we like a sake doesn't mean a deal is immediately struck.
Trust is essential to be entrusted with sake that a brewery has carefully nurtured. Sometimes, it takes over a year to build a relationship before we can begin to carry their products.

What TOKYO SAKE BASE wants to deliver is not just "sake that sells."
It's sake that we ourselves are captivated by, and that we want to convey along with the brewery's passion.

An encounter with a lesser-known bottle can broaden a drinker's world.
We select and deliver such sake.
