“How much can be expressed with just rice, water, koji, and the power of microbes?” The “K” in Tsuchida Shuzo’s K-series stands for Kijoshu, a brewing method where a portion of the water used in preparation is replaced with sake. This Banana K combines the rich texture unique to Kijoshu with yeast that produces a banana aroma and the acidity derived from the kimoto method, creating an astonishingly realistic “ripe banana” flavor.
Without using any fruit, and through traditional kimoto techniques and the luxurious Kijoshu brewing method, it achieves a blissful sweetness and richness reminiscent of a banana shake. The finish is tightened by Tsuchida’s characteristic firm acidity, making it sweet yet crisp. This is a creative “drinking dessert” that vividly redefines preconceived notions of sake.
