    Many people who take their first sip of Regulus exclaim, "This is sake?" What rises from the glass is a refreshing, zesty aroma, just like freshly picked grapefruit or lemon. When it touches your palate, a juicy sweetness and a strikingly intense sourness spread delightfully.

    The secret to this unique flavor lies in the use of "white koji," typically used in shochu production, in the brewing process. The citric acid derived from white koji blends with the umami of rice characteristic of sake, creating a fresh and sharp acidity, much like an adult lemonade or white wine. With an alcohol content of 12%, it's perfect as a first drink and can be enjoyed lightly even by those who are not strong drinkers.
