As the name "Ginshari" (polished white rice) suggests, this sake aims to capture the delicious umami of the white rice we enjoy daily. Its most distinctive feature is the exclusive use of 100% Sasanishiki, the king of table rice, rather than sake-brewing rice. As you bring the glass closer, the first thing you'll notice is a soft, sweet aroma, much like freshly cooked rice. The texture is surprisingly rich and juicy. The multi-layered umami of the unfiltered rice melts on your tongue, followed by the fresh acidity characteristic of unpasteurized sake, brightly framing the overall flavor. The elegant sweetness and crisp finish unique to Sasanishiki are beautifully integrated with the robust power of the original sake, offering an exceptionally satisfying drink.

Grilled black cod with Saikyo miso, Nikujaga (meat and potato stew), Kinpira Gobo (braised burdock root). Also, adding a little minced salted kelp and sesame oil to a simple tofu dish will further enhance the rice umami of the sake.
