    The allure of white peach, brought forth by "Yami" (wild taste). A miraculous transparency born from a low polishing ratio of 90%.

    "HIMENOI yami," brewed by Ishizuka Brewery in Kashiwazaki City, Niigata Prefecture, is a limited edition sake that, despite its low polishing ratio of 90%, expresses an astonishingly clean sweetness. Its name "Yami" (野味) comes from the wild taste characteristic of 90% polished rice. Seventy percent of the brewing water used is meltwater from the snowy region of Takayanagi, and white koji is used to bring out a white peach-like aroma and a refreshing acidity derived from the white koji.

    Its greatest characteristic is the gap between the juiciness from Ishizuka Brewery's specialty "mochigome yondan jikomi" (four-stage preparation with glutinous rice), the wild, grainy flavor, and the elegance of a ginjo-grade sake. The label features a "bear" symbolizing its strength, visually asserting its unique character. This sake, carefully finished with a single pasteurization in the bottle, pleasantly defies the conventional wisdom of sake.
