    A quiet, fresh acidity brought to life by white koji.

    This next-generation sake for meals brings a sense of calm to the heart. The first time I tasted this sake, the immediate thought was, "What a refreshingly clear acidity!" Brewed in Takayanagi, a snow-covered region of Niigata, "calm" lives up to its name with a transparency reminiscent of a tranquil, calm sea. The presence of citric acid, brought out by the use of white koji, pleasantly redefines the image of sake as we know it, offering a taste that is a step ahead of the rest.

    The mouthfeel is remarkably light, with a sharp acidity, reminiscent of lemon or Japanese citrus, beautifully framing the soft sweetness derived from the rice. By using white koji, which is common in shochu production, we have achieved a crispy, modern dryness that feels completely unheavy. The finish is clean and swift, with an aftertaste that fades away, truly embodying "stillness." This design of "acidity" makes it an incredibly high-potential sake for meals, as it effortlessly cuts through the richness of food. It's perfect for those who find the typical richness of sake a bit much, or who seek the lightness of a white wine.
