    Description

Niida Honke’s Niida Shizenshu captures the pristine, original landscape of rice.

Its overwhelming richness, created from naturally cultivated rice grown without pesticides or fertilizers, leaves a profound first impression that deeply permeates the heart. The kimoto brewing method, kuratsuki yeast, and a low rice polishing ratio of 80% maximize the wild strength and warm sweetness inherent in the rice. Despite being a genshu (undiluted sake) without added water, its texture is surprisingly soft, and the lactic acid-derived richness that spreads in the aftertaste provides a deep sense of comfort.

Brewed completely free of additives, it achieves the character of a true food-pairing sake that you won't tire of. Recommended for those who appreciate traditional brewing methods or want to experience the bounty of nature directly.

Rich umami / Soft sweetness / Strong acidity
