    Description

Hattan No. 35 in action. Direct, powerful umami and the vitality of fresh undiluted sake.

This is a limited-time seasonal fresh undiluted sake, bottled immediately after pressing without any pasteurization, representing the true essence of Fujii Shuzo's "Junmai, Unfiltered, Undiluted Sake." The raw material used is Hattan No. 35, a rare traditional rice from Hiroshima that once disappeared due to cultivation difficulties. The wild umami inherent in the rice itself and the effervescent freshness characteristic of fresh sake combine to create a magnificent surge of energy.

The mouthfeel is extremely rich and powerful. The full-bodied framework characteristic of Hattan No. 35 is further amplified by the volume of the fresh undiluted sake. However, the clean, crisp acidity characteristic of Ryusei provides a clear finish, ensuring that despite its richness, it never feels heavy. This is a vibrant sake that can only be expressed by a brewery that believes in the traditional "power of rice."
