    A stone cast into the concept of sake. A miraculous sake born from "specified rice" of a phantom rice variety.

    "Isseki" (meaning "one stone"), presented by Tsuchida Shuzo, is a challenging sake brand that literally casts a stone into the established concepts of the sake industry. For its raw material, 100% "specified rice" (commonly known as "kuzu-mai" or broken rice) of "Yukihotaka," a phantom local rice variety not distributed in the market, is used. This sake was born to prove Tsuchida's belief that "delicious sake can be made from any kind of rice," using rice that was rejected for food consumption due to grain size or breakage.

    The flavor is clean, mellow, and gentle, deliberately overturning Tsuchida's characteristic image of individuality. Its high quality, smooth and easy to drink without any harshness, was highly praised at last year's hatsushibori (first pressing) and has now been released as an independent brand. It is a sake brewed with the hope that Tsuchida Shuzo's philosophy—to explore diverse possibilities and wish for a future where choices beyond sake rice are available—will spread like ripples.

    • Rice polishing ratio: 75% for shubo-mai (starter rice), 64% for kake-mai (moromi rice), 64% for koji-mai (koji rice)

    • Alcohol content: 14% (Genshu - undiluted sake)

    • Special designation: Junmai-shu (no additives requiring label disclosure are used)

    • Brewing method: Kimoto, one pasteurization

    • Yeast: Tsuchida IDO Yeast

    • Koji mold: Byakuya (white night), Shochu-use yellow koji, Shochu-use white koji

    【Recommended way to drink】 Enjoy at room temperature to savor the gentle sweetness of the rice and its "smooth" texture. With an alcohol content of 14% for an undiluted sake design, it is easy to drink without fatigue and can be enjoyed across a wide range of temperatures.
